Why Assyrtiko from Santorini Is Unique

What makes Assyrtiko truly exceptional is its ability to maintain high natural acidity even under extreme conditions. Santorini’s volcanic soil, intense sun, strong winds and minimal rainfall create a challenging environment where only the strongest vines survive.

Unlike Assyrtiko grown in other regions, Assyrtiko from Santorini remains deeply mineral, saline and structured, directly reflecting the island’s volcanic landscape. This unique expression cannot be replicated elsewhere.

PDO Santorini Wines & Volcanic Terroir

Assyrtiko is the backbone of PDO Santorini wines, produced under strict regulations that protect the island’s winemaking heritage and guarantee origin and authenticity. PDO Santorini wines must be made exclusively from grapes grown on the island, reflecting its volcanic terroir and centuries-old traditions.

There are three official PDO Santorini wine styles, each expressing Assyrtiko and the island’s character in a different way:

PDO Santorini
This is the island’s classic dry white wine, typically fermented in stainless steel tanks. By law, it must contain at least 85% Assyrtiko, with up to 15% Aidani and Athiri. Fresh, mineral and precise, PDO Santorini highlights purity, acidity and volcanic expression.

PDO Nykteri
Nykteri is a more structured and powerful expression of Santorini wine. It is traditionally produced from Assyrtiko or a blend of Assyrtiko with Aidani and Athiri, and must be aged for a minimum of three months in oak barrels. Richer and more complex, Nykteri reflects depth, maturity and aging potential.

PDO Vinsanto
Vinsanto is Santorini’s iconic naturally sweet wine, made from sun-dried grapes. According to PDO regulations, it must contain at least 51% Assyrtiko, with the remaining percentage coming from local white varieties such as Aidani and Athiri. Long aging and natural sweetness create a wine of great concentration, complexity and longevity.

Santorini’s volcanic soil , rich in ash, pumice and lava ,protects the vines from phylloxera, allowing them to remain ungrafted and among the oldest vines in the world. Many Assyrtiko vines are over a century old, producing extremely low yields with remarkable concentration and character.

Kouloura Training & Ancient Viticulture

To survive the island’s harsh conditions, Santorini winemakers developed the traditional kouloura vine-training system. Vines are woven into basket-shaped formations close to the ground, protecting the grapes from wind and sun while capturing moisture from the sea air.This ancient technique is essential to preserving freshness, acidity and balance in Assyrtiko wines.
