Santorini is globally known for its dramatic views, but its true heritage lives in its vineyards. The history of Santorini wine is one of the oldest continuous wine stories in the world, shaped by volcanic soil, extreme climate and centuries of human resilience.
Wine production in Santorini dates back more than 3,500 years, to the Minoan civilization. Archaeological evidence proves that viticulture existed on the island long before the massive volcanic eruption around 1600 BC. Despite natural disasters and historical upheavals, wine has never stopped being produced in Santorini.
Volcanic Soil & Santorini Vineyards
What makes Santorini vineyards truly unique is the island’s volcanic soil, rich in ash, pumice and lava stone. This soil is extremely poor in nutrients but ideal for vine survival, forcing vines to produce low yields with intense concentration. Most importantly, the volcanic soil protected Santorini from phylloxera, allowing vines to remain ungrafted and among the oldest vines in the world.
To survive strong winds, intense sun and minimal rainfall, Santorini winemakers developed the traditional kouloura vine-training system. Vines are woven into basket-shaped formations close to the ground, protecting grapes and capturing moisture from the sea air a technique that defines Santorini’s viticulture to this day.
Assyrtiko – The Signature Grape of Santorini
At the heart of Santorini wine is Assyrtiko, one of Greece’s most important indigenous grape varieties. Assyrtiko is renowned for its high acidity, strong mineral character and exceptional ability to express volcanic terroir. Whether grown in Santorini or elsewhere, Assyrtiko from Santorini remains unmatched.
Alongside Assyrtiko, traditional varieties such as Athiri and Aidani also contribute to the island’s white wines and historic sweet wine traditions.
